Dark Chocolate Chunk Oatmeal Cookies

These delicious cookies are a high-fiber dessert that combine hearty oats, warm spices, and rich dark chocolate chunks for a perfect balance of flavor and texture. With a soft and chewy center and a slightly crisp edge, they’re a wholesome treat that’s easy to make.

Ingredients

  • ¼ cup of butter, softened

  • ¼ cup of brown sugar, packed

  • ¼ cup of extra virgin olive oil

  • ¼ cup plus one tablespoon of water

  • ¼ cup of honey

  • One egg, room temperature

  • One tablespoon of vanilla extract

  • ½ cup of Nutrim

  • ½ cup of whole wheat pastry flour

  • One cup of oats

  • One tablespoon of baking soda

  • ½ tablespoon of salt

  • 1½ teaspoons of cinnamon

  • One tablespoon of allspice

  • ½ tablespoon of nutmeg

  • ½ cup of dark chocolate chunks

  • ½ cup of walnut halves

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Lightly grease or line a baking sheet with parchment paper.

  2. In a large mixing bowl, cream together the butter, brown sugar, olive oil, water, and honey until smooth.

  3. Add the egg and vanilla extract, mixing until well combined.

  4. In a separate bowl, whisk together the Nutrim, whole wheat pastry flour, oats, baking soda, salt, cinnamon, allspice, and nutmeg.

  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

  6. Fold in the dark chocolate chunks and walnuts.

  7. Using a medium cookie scoop or spoon, drop the dough onto the prepared baking sheet, spacing them about two inches apart.

  8. Bake for twelve minutes or until the edges are golden brown.

  9. Let the cookies cool on the baking sheet for fivr minutes before transferring them to a wire rack to cool completely.

  10.  Enjoy warm or store in an airtight container for up to five days.
