Instructions
Start by preheating your oven to 350 degrees Fahrenheit. In a medium-sized mixing bowl, combine the whole wheat pastry flour, Nutrim, brown sugar, cinnamon, baking powder, and baking soda. Mix well and make a well in the center of the dry ingredients.
In a separate bowl, whisk together the wet ingredients: olive oil, egg, applesauce, melted butter, honey, and vanilla extract. Pour the wet mixture into the well of the dry ingredients and stir gently until just combined. Be careful not to overmix, as this could affect the muffin texture.
Fold in the blueberries and any optional nuts you’d like to add for extra crunch. Spoon the batter evenly into greased muffin cups, filling each about 2/3 full.
