Ingredients

Homemade Whipped Topping:

  • One cup of instant non-fat dry milk

  • One cup of ice water

  • Four tablespoons of granulated sugar

  • One teaspoon of almond extract

  • Five tablespoons of Nutrim Oat Bran

  • Three teaspoons of fresh lemon zest

  • Two teaspoons of fresh lemon juice

Crust:

  • One and a half cups of almonds

  • Two cups of chopped dates

Fruit Layer:

  • Three bananas, sliced

  • One quart of strawberries, sliced

  • One pint of blueberries, whole

  • Two kiwis, sliced

  • One teaspoon of fresh lemon juice

Instructions


For the whipped topping:
In a mixing bowl, combine the instant non-fat dry milk with the ice water. Beat the mixture for about three minutes or until stiff peaks form. Add the granulated sugar, almond extract, Nutrim Oat Bran, fresh lemon zest, and lemon juice. Continue blending for an additional four minutes or until the mixture thickens to a fluffy consistency.

For the pie:
In a food processor, blend the almonds and chopped dates together until they form a sticky dough. Press the mixture into the bottom of a pie plate to create a firm, even crust.

Next, drizzle one teaspoon of lemon juice over the sliced bananas to prevent browning, and layer them into the prepared crust. Spread about three tablespoons of the whipped topping over the bananas. Then, layer half of the sliced strawberries, blueberries, and kiwi slices over the whipped topping. Repeat the layers, finishing with a beautiful layer of fruit.

For the final touch, garnish the pie with ground dates for a bit of extra sweetness and texture. Refrigerate the pie for at least an hour before serving to allow the flavors to meld together.
